Boiled Cherry Fruit Cake

Celebrate Christmas with this old-fashioned boiled fruit cake spiked with sherry and dotted with glace cherries.

Method

Place the butter، mixed fruit، cherries، brown sugar، sherry and 1 cup water in a saucepan over medium heat. Bring to the boil. Reduce heat to low and simmer for 10 minutes. Set aside to cool.

Preheat oven to 160C/140C fan forced. Line the base and side of a round 20cm cake pan with baking paper

Add the flours، mixed spice، bicarbondate of soda and eggs to the fruit mix and stir until well combined. Pour into the prepared pan. Bake for 55 mins or until a skewer inserted into the cake comes out clean. Set aside to cool in the pan.

Dust with icing sugar and top with extra cherries to serve.
