Orange and blueberry

Orange and blueberry bread
Easy blueberry and orange bread for the holidays with simple frosting!

Ingredients
½ cup Greek yogurt
½ cup unsalted butter melted
¼ cup lemon or orange juice
2 large eggs
½ teaspoon vanilla extract
¾ cup granulated white sugar
1 ½ cups allpurpose flour
1 ½ tsp baking powder
¼ teaspoon of salt
Zest of 1 large orange
1 ½ cups fresh blueberries
Orange glaze
3 to 4 tablespoons of orange juice
1 cup of icing sugar
1 tablespoon of orange zest

Instructions
Preheat the oven to 350F177C.
Line an 8inch 20 cm loaf pan with parchment paper and spray the sides with cooking spray.
In a large bowl combine Greek yogurt melted butter lemon or orange juice eggs vanilla and sugar.
Mix on medium speed for a few minutes until the eggs are well beaten.
In a separate bowl combine the dry ingredients flour baking powder and salt.
Sift the dry ingredients into the dough then mix on medium speed for 30 seconds to 1 minute until the flour is incorporated.
Do not mix the dough too much.
Then add the zest of 1 large orange and the fresh blueberries see my notes in the previous post for instructions on how to use frozen or dried berries.
Transfer the blueberry and orange batter to the prepared loaf pan.
Bake in the preheated oven for 50 to 60 minutes until a toothpick inserted in the center comes out clean.
The sides will have a rich golden brown color.
Remove the bread from the pan once it has finished baking and cool on a rack.
For the easy orange glaze squeeze out the large orange that was used earlier for the orange zest.
Add about 3 to 4 tablespoons in a bowl and add the icing sugar.
Add the orange zest and whisk until a smooth glaze is formed.
For a thicker glaze add more sugar for a thinner glaze add more orange juice.
Pour the prepared frosting over the cooled blueberry bread chill for about 30 minutes before frosting.
Once the bread has cooled store it tightly wrapped in plastic at room temperature.
