Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/4 cup granulated sugar
1/2 cup unsalted butter, melted
1/2 tsp cinnamon
For the Cheesecake Filling:
16 oz cream cheese, softened
1/2 cup granulated sugar
1 tsp vanilla extract
2 large eggs
1/4 cup sour cream
For the Topping:
1/4 cup granulated sugar
1 tsp cinnamon
Optional: caramel sauce for drizzling
Instructions:
Prepare the Oven:
Preheat your oven to 325°F (160°C). Line an 8x8-inch baking pan with parchment paper, leaving some overhang for easy removal later.
In a bowl, combine graham cracker crumbs, sugar, melted butter, and cinnamon. Mix until well combined.
Press the mixture firmly into the bottom of the prepared baking pan. Bake for 8-10 minutes or until lightly golden. Let it cool slightly.
Prepare the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy.
Add in the vanilla extract and mix until combined.
Add the eggs one at a time, mixing well after each addition. Finally, mix in the sour cream until fully incorporated.
Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
Bake:
Bake the cheesecake bars for 30-35 minutes, or until the center is set and only slightly jiggles. Turn off the oven and leave the door ajar for about an hour to cool gradually.
Chill:
After cooling, refrigerate for at least 4 hours or overnight to firm up.
Prepare the Topping:
Mix together the sugar and cinnamon in a small bowl. Once the bars are set, remove them from the pan using the parchment paper overhang.
Serve:
Cut into squares and drizzle with caramel sauce if desired.
