Ingredients:
For the Cake:
2 large eggs 🥚
1/2 cup sugar 🍬
1 cup all-purpose flour 🌾
1 tsp baking powder 🌿
1/2 tsp salt 🧂
1/4 cup vegetable oil 🛢️
1/2 cup coconut milk 🥥
1 tsp vanilla extract 🍦
1 tsp coconut extract 🥥
2/3 cup sweetened flaked coconut 🥥
For the Mango Purée:
6 ripe mangoes 🥭
1/2 cup sugar (optional) 🍬
1/2 cup cold water 💧
2 envelopes gelatin (5 tsp) 🟠
For the Whipped Cream:
3 cups heavy whipping cream 🥛
1 cup powdered sugar 🍚
Instructions:
For the Cake:
1️⃣ Preheat oven to 350°F (175°C). Grease and line a 9-inch springform pan with parchment paper.
2️⃣ Warm eggs by placing them in a bowl of hot water for 10 minutes.
3️⃣ Beat eggs and sugar on high speed for 8-10 minutes until thick and fluffy.
4️⃣ Sift flour, baking powder, and salt over the egg mixture. Gently fold to combine.
6️⃣ Pour into the prepared pan and bake for 22-25 minutes. Let it cool completely.
7️⃣ Line the inside of the springform pan with parchment strips extending above the cake.
For the Mango Purée:
1️⃣ Sprinkle gelatin over cold water to soften.
2️⃣ Blend peeled and cubed mangoes into a smooth purée.
3️⃣ Simmer purée and optional sugar for 8-10 minutes.
For the Whipped Cream:
1️⃣ Whip heavy cream, gradually adding powdered sugar until stiff peaks form.
2️⃣ Gently fold half the whipped cream into the mango purée, then fold in the rest.
Assembling the Cake:
1️⃣ Place the cooled cake back in the prepared springform pan.
2️⃣ Pour the mango mousse over the cake layer and chill for 4-6 hours or overnight.
3️⃣ Once set, remove the pan and parchment. Garnish with fresh mango cubes and mint.
